Steak & Oven Roasted Veggies

Ingredients:
Steak
1 cup broccoli
1 red onion
2 cups carrots
1-2 bell peppers
Baby red potato or sweet potato (optional)
2 Tbsp. olive oil
1 Tbsp. coconut aminos
Steak Marinade:
2 Tbsp. olive oil
1/4 cup apple cider vinegar
1/4 cup honey
2 garlic cloves
Salt, pepper, garlic powder, and any seasoning you prefer on your steak.
Instructions:
Place the steak in a glass bowl or container for the marinade. Add olive oil, apple cider vinegar, honey, minced garlic, and seasonings. Let the steak marinate for at least 20 minutes.
Preheat the oven to 400°F (200°C).
Begin chopping the vegetables. Combine the chopped vegetables in a bowl and toss in the olive oil and coconut aminos.
Spray a sheet pan with olive oil spray and place the vegetables evenly throughout. Top with salt and pepper. Bake for 15-25 minutes, depending on how large or small you chop your vegetables.
Grill the steak to your preference.
