‘FANCY' AVOCADO TOAST

Servings: One

Ingredients:

  • Two eggs

  • ½ - 1 avocado

  • One slice of toast or sourdough

  • Two pieces of turkey bacon

  • 1 tsp olive oil

  • 1 tsp lemon juice

  • ⅛ tsp garlic powder

  • ⅛ tsp onion powder

  • Salt

  • Pepper

  • Optional: Red pepper flakes

  • Optional: Everything But The Bagel seasoning

Instructions:

  1. Heat a pan over medium heat and cook the turkey bacon until crispy.

  2. While the bacon is cooking, prepare the avocado spread by mashing up the avocado in a small glass bowl. Add the olive oil, lemon juice, garlic powder, onion powder, salt, and pepper to taste.

  3. Pop the bread into the toaster.

  4. Once the bacon is done, remove it from the pan and set it aside. In the same pan, cook your eggs to your desired doneness.

  5. Spread the avocado mash onto the toasted bread.

  6. Add the cooked bacon and eggs to the sandwich.

  7. Sprinkle with red pepper flakes and/or Everything But The Bagel seasoning, if desired.

  8. Enjoy your delicious and healthy breakfast sandwich!
