Taco Salad

Packed with protein-rich beef, crunchy mixed greens, and flavorful toppings like guacamole and salsa, this salad is the perfect way to satisfy your hunger and your taste buds.
Servings: 3-4
Ingredients:
1 lb. beef
Taco seasoning (preferably anti-inflammatory like the brand Siete)
Onion
Guacamole
Lime juice
Salsa
Spring mixed greens
Sour cream (optional)
Beans of choice (optional)
Instructions:
Heat a pan to medium and begin to chop the onion.
Once the pan is heated, add the beef and onion.
While the beef is cooking, prepare the greens in a bowl. Break them in half with your hands while portioning about 2-3 cups of greens in the bowl.
Make your guacamole or use a store-bought brand like Wholly Guacamole. Use this as a part of your dressing and mix it into the greens. Squeeze a wedge or two of lime juice onto the greens as well.
Once the beef is browned, add the taco seasoning and water.
Once the taco meat is ready, add 4-6 oz of it on top of the greens.
Top with salsa, and add sour cream and beans if desired.
