Fruit Gummies
A fun way to get your fruit in! Super easy and delicious. Although this lacks the fiber that whole fruits have, you do get the added benefits of gelatin! It's nutritionally very similar to collagen, which is great for your connective tissues, hair, skin, nails, gut microbiome, etc. If you're ever in a rut with fruit, try this!
Servings: 5
Ingredients:
1.5 cup juice (Read the nutrition label for any potentially harmful ingredients. Ideally its 100% juice, no sugar added. Mango and tart cherry are my favorites to use!)
4 tbsp unflavored gelatin (typically one box)
Optional: Stevia or honey
For sweetener, you can use any of the following:
Stevia granule: 2 tsp
Liquid stevia: 6 drops
Honey: 1-2 tbsp
Instructions:
Pour your juice into a small pot and gradually add in the gelatin powder while mixing very slowly. Make sure all of the powder is absorbed.
Turn your stovetop to medium heat and mix every two minutes for 10-15 minutes. Don't let the pot boil! You’ll know your mixture is finished when it has gone from thick to runny.
Add sweetener of your choice (stevia or honey) and mix thoroughly.
Use silicone molds, glass Tupperware, or a shallow pan to shape your gummies. Refrigerate for at least four hours.
Once refrigerated, remove the gummies from the mold or pan. Cut them into bite-sized pieces or strips as per your preference.
Store the gummies in the refrigerator for up to two weeks.
Disclaimer: without Stevia or honey these fruit gummy's are not the most sweet or flavorful. If you know you have a sweet tooth, I recommend adding a sweetener.
