Citrus Chicken Salad

Servings: Four

Ingredients:

  • 2-3 chicken breasts

  • Citrus seasoning blend

  • 8 cups mixed greens

  • 1 cup cherry tomatoes

  • 1-2 cucumbers

  • 1 red onion

  • 1 oz feta or goat cheese (optional)

Citrus Dressing:

  • 1 Tbsp. olive oil

  • 1 Tbsp. balsamic vinegar

  • Lemon juice to taste

Instructions:

  1. Turn the pan onto medium heat and prepare the chicken by coating it in a thin layer of olive oil, then toss in the citrus seasoning blend.

  2. Spray the pan with olive oil or avocado oil spray, and grill the chicken until fully cooked to 165°. Let the chicken rest for a few minutes before cutting it into cubed pieces.

  3. Prepare salad greens and chop the tomatoes, cucumbers, and onion.

  4. Mix your olive oil, balsamic vinegar, and lemon juice for your dressing.

  5. Toss the greens with the salad dressing, mix in the cheese (optional), and top with the chicken.
