Slow Cooker Chicken Wild Rice

15 minute prep time - Crazy simple and fast!

5-8 hour cook time

INGREDIENTS

  • 1 ½ pounds boneless skinless chicken breasts

  • Salt and freshly ground black pepper, to taste

  • 4-5 cups chicken bone broth

  • 1 cup wild rice

  • 3 cloves garlic, minced

  • 1 onion, diced

  • 3 carrots, peeled and diced (or one bag of baby carrots)

  • 3 stalks celery, diced

  • ½ teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • ¼ cup unsalted butter or ghee

  • ¼ cup flour of choice

  • 2 cups milk of choice

  1. Season chicken with salt and pepper, to taste. Place chicken into a 4 or 6-qt slow cooker.

  2. Stir in chicken bone broth, wild rice, garlic, onion, carrots, celery, thyme, rosemary; season with salt and pepper, to taste. Cover and cook on low heat for 6-8 hours (or high for 4-5)

  3. Shred chicken in the slow cooker, it should easily fall apart. I use tongs and it shreds nicely!

  4. Melt butter in a saucepan over medium heat. Whisk in flour until lightly browned, about 1 minute. Whisk in milk and cook, whisking constantly, until slightly thickened, about 4-5 minutes; season with salt and pepper, to taste.

  5. Stir milk mixture into the slow cooker. If the soup is too thick, add more milk as needed until desired consistency is reached.
