Scramble Skillet
Start your day off right with this nutritious and protein-packed breakfast skillet! Filled with fresh vegetables and healthy chicken sausage, this one-serving meal is perfect for anyone looking to prioritize their health and wellness.

Ingredients:
2-3 eggs
2 oz chicken sausage (try Amylu or Applegate brands)
Vegetables (onions, mushrooms, bell peppers, spinach)
1 baby red potato
½-1 tbsp olive oil
½-1 avocado
1 tsp olive oil
1 tsp lemon juice
⅛ tsp garlic powder
⅛ tsp onion powder
Salt and pepper
Instructions:
Heat a skillet over medium heat and add olive oil.
Once the oil is hot, add cubed potatoes, bell peppers, and onions. Let cook until browned, stirring occasionally (about 10-15 minutes).
Add in mushrooms and sausage, cook for 3-5 minutes.
Add in spinach and cover the pan for 5 minutes.
While the skillet is cooking, make the avocado mash by combining avocado, olive oil, lemon juice, garlic powder, onion powder, salt, and pepper in a small bowl.
Once the skillet is fully cooked, top with avocado mash and enjoy!
