Scramble Skillet

Start your day off right with this nutritious and protein-packed breakfast skillet! Filled with fresh vegetables and healthy chicken sausage, this one-serving meal is perfect for anyone looking to prioritize their health and wellness.

Ingredients:

  • 2-3 eggs

  • 2 oz chicken sausage (try Amylu or Applegate brands)

  • Vegetables (onions, mushrooms, bell peppers, spinach)

  • 1 baby red potato

  • ½-1 tbsp olive oil

  • ½-1 avocado

  • 1 tsp olive oil

  • 1 tsp lemon juice

  • ⅛ tsp garlic powder

  • ⅛ tsp onion powder

  • Salt and pepper


Instructions:

  1. Heat a skillet over medium heat and add olive oil.

  2. Once the oil is hot, add cubed potatoes, bell peppers, and onions. Let cook until browned, stirring occasionally (about 10-15 minutes).

  3. Add in mushrooms and sausage, cook for 3-5 minutes.

  4. Add in spinach and cover the pan for 5 minutes.

  5. While the skillet is cooking, make the avocado mash by combining avocado, olive oil, lemon juice, garlic powder, onion powder, salt, and pepper in a small bowl.

  6. Once the skillet is fully cooked, top with avocado mash and enjoy!
